Bluebird Pear Salad
Our pear salad is a fan favorite, and it’s easy to see why! Mixed greens are topped with spiced walnuts, sliced pear, blue cheese, tomatoes and house-made roasted pear vinaigrette to create a refreshing meal packed with flavor. It was named one of The South’s Best Cheap Eats by Southern Living. Try it for yourself at the Bluebird, or make it at home using the recipe below!
Pear Salad
- Spring mix or wild lettuce mix
- 2 oz blue cheese
- 3 quartered cherry tomatoes
- 1/4 slice D’Anjou pear
- 2 oz spiced walnuts (recipe below)
- Pear Vinaigrette Dressing (recipe below)
Spiced Walnuts
- 2 tsp brown sugar
- 1 tsp chili powder
- salt and pepper to taste
Sprinkle walnuts in olive oil and toss in the spice mixture.
Preheat oven to 350 and lightly toast for 7 minutes.
Pear Vinaigrette
- 2 roasted pears
- 1/3 cup oil
- 3 tbs red wine vinegar
- 1 1/2 tsp Dijon mustard
- One clove chopped garlic
- salt and pepper to taste
